My Vegan Mondays

Coming off a 10-day free-for-all that included homemade peach and blueberry cobbler, many Manhattans, slice after slice, and multiple pastries for breakfast, it was good to read Time’s cover story about organic food—a reminder of treating your body to fresh fruits and vegetables and natural grains is the way to go. Hello, Vegan Monday!

Morning
Slept through the crummy airplane food

Afternoon
Motley salad: a few greens, some tomatoes, bulger and lentils... random
Banana

Evening
Carrots and hummus
Toast with hummus

  3. As I tossed and turned from 3 to 4 a.m., I decided I have the ingredients at home to do another Vegan day today. Because you're right, Candice, it was almost a fast yesterday - too easy. So I just had my early morning oatmeal, will hopefully catch a nap before having to go to work for a loooong day, and then fuel myself with simple food.

  4. There's a new vegan restaurant on rue Duret in the XVIe (The Gentle Gourmet) that got rave reviews. My husband and I have already made reservations to celebrate New Year's Eve there:) www.happycow.com
