Am I impressing you with my dedication to Vegan Mondays?? It's actually a fun and surprisingly easy challenge. Save for a couple pieces of gruyere, yesterday was vegan, too.

Falafel sandwich
Carrots and hummus
Orange
Dried apricots
Evening
Two glasses of champagne*
Couscous with root vegetables
*I stopped by a vernissage and got to indulge in some Moet, but had to pass up the cheese and sushi.
I am impressed. I'm also impressed with my husband, who has signed on and agreed to do "Meatless Mondays" with me, and has kept to it for 3 weeks! (It helps that I make red lentils with pita and veggie pizza for him.)
