My Vegan Mondays

I loved reading this piece from Dan Barber in the WSJ Magazine. (It inspired scheming to get back to Blue Hill at Stone Barns, tout suite.)

Coffee with soy milk
Cereal medley with almond milk

Steamed veg & roasted potatoes

Vegan tortellini 
Mixed salad

  1. All I wanted to eat today was a salad made of fruit, berries and apples and oranges. While the fruit is in the markets, it is not really the sweetest and best in the winter, so I guess I will wait until summer.
    I made a side-dish the other night that is a great vegetarian main course also, roasted potatoes, sweet potatoes, sweet orange squash and red onions and carrots. All tossed in seasoning and olive oil and roasted.
    Delicious alone or on pasta or in a sandwich :)

  2. I always find myself ravenous by 4pm at the office. How does that lunch keep you sated? (to be fair, I do give in to chocolate urges quite frequently... that might be working against me!)
