My Vegan Monday

Coffee with soy milk (are women supposed to stay away from soy? or consume more of it? anyone?)
Green juice (kale, apple, cucumber, flax seeds, lemon juice, frozen banana)


Moscow Mule
Chickpea and lentil soup
Carrots and hummus

Life has funny rhythms. It used to be that I'd bang out two blog posts a day. Now days, if not weeks, go by and i can't get my *@!# together. 

It used to be that I woke up Monday mornings, ready and hungry for veganism. Now, half the time I forget it's Monday. And/or I forget to pass on the dairy.

That said, I'm still devoted to my Vegan Mondays, a personal spin on Meatless Mondays. Especially when I read about VB6 or hear that Graham Hill, the founder of Treehugger is a "Weekday Veg." 

There are all kinds of small steps we can take to create a more balanced and healthier nation and, my god, how nice is it that there's something so relatively low effort that we can do regularly to make a difference?

I don't have time to write and blog the way I used to. But I'm still devoted to being connected to you guys, still devoted to eating more sustainably, still hopeful and excited about all the things to come, both from within and out in this great big world. Thanks for sticking with me!

  2. Oh you know me, wandering all over the planet and buying house and such stuff, there is always time for you :)
    I have not eaten meat in 40 years so I am sticking to that, vegan will be too hard for me these days. But I love the idea of people just not eating meat one day a week .. how hard can that be ?!
    Our dinner tonight, I make a salad, with lettuce, tomatoes, red onion and tonight will have fresh mozzarella, tossed in a little olive oil with salt and pepper and served on fresh , toasted french bread.. a Salad Sandwich :)
    Perfect steamy summer meal.. of course, followed by chocolate covered orange rinds.

  3. Most soy in North America is genetically modified poison. Avoid it like the plague.

    See what JJ Virgin has to say about it. Very interesting. She recommends healthier alternatives like coconut milk.

  5. It's wonderful to see a blogger discuss veganism on a mainstream blog and promoting a healthy, compassionate, environmentally-friendly lifestyle! I have been vegetarian since 2005, vegan since 2009. Long-term, scientific research shows it is best to stick to organic versions of whole soy products like tofu, tempeh, and edamame. (I recommend reading The China Study by T. Colin Campbell, and Livestock's Long Shadow which you can find full pdf for by Food and Agriculture Organization of United Nations Soy creamers, yogurts, ice creams, etc. are nice little treats, but shouldn't be a mainstay of the diet.   6. Soy is actually a food that can cause a lot of inflammation within a person. My daughter has Crohn's Disease, and we switched from cow to soy- and the soy ended up causing a lot of damage. I would suggest rice milk over the soy (which is what we use now), or even coconut milk. However, I am not a vegan or vegetarian (although I've thought a lot about it over the past couple of years) I am speaking strictly on our experience with soy milk and what I've learned about it. Her GI doc later revealed to us as well in a recent appointment that soy is in the top 10 list of foods that cause inflammation.

  7. I never consumed meats inside Forty years so I feel staying with which, vegetarian will be too hard personally nowadays. However i really like thinking about men and women not consuming various meats one day weekly .. exactly how difficult may in which end up being ?! Our dinner today, We come up with a healthy salad, using lettuce, tomato plants, red red onion and also this evening will have fresh mozzarella, thrown inside a minor essential olive oil with pepper and salt along with offered on fresh new , roasted this particular language bakery.. any Healthy salad Meal :)
