My Vegan Mondays

Morning
Coffee with soy milk
Pretzels (I donated blood and this was the most appealing option in the canteen!)

Afternoon
"General Tso's Seitan"—a clever vegan wrap of brown rice, broccoli and seitan
Clementine
Peanuts
A giant ball of stress

Evening
Homemade white bean and kale soup
Tea—not quite like Teuscher truffles, but I do need to lay off the sweets a bit

  2. "need to Lay off the sweets a bit " ... what does this mean. I don't understand this sort of sentence .. there is no such thing as this "need " ... for example .. todays meals so far ..
    coffee, with milk and a lot of sugar.
    a scone
    lunch might be another scone
    dinner will be pasta and something sweet to follow.

  3. Hi. I just got copy of your book. Loved the way you described the sweets..they sound ethereal. & I'm really not a sweets person. Curious though, how do deal with the health issues connected to eating sweets?...many sweets

    Thanks so much, Maureen! My only true health concerns are diabetes (been tested - all okay) and cavities (here, I have not fared so well). Otherwise, it's just a calorie and physique thing, which I counter with a lot of vegetables and exercise. C'est tout! xo
